The Other White Meat

Foil Pack Chicken

I'm all about Mexican foods and this just sounded really yummy to me. I found it on Sparkpeople (Thanks Christi!). For those of you who have an iPhone or a phone that allows apps there are two Sparkpeople apps that are really great. One is for recipes and the other is a diet tracker.

Okay, on to the delish dish!

3 small boneless skinless chicken breasts
1 pkg taco seasoning
3 small red or golden potatoes
6 T salsa
3/4 cups shredded Mexican style cheese
3 T sour cream for topping

Preheat oven to 400 degrees. Lay out 3 large sheets of foil. Slice each potato thinly, and lay out one on each foil.

Shake chicken in bag with taco seasoning, and place atop potatoes (I was able to coat 4 chicken breasts with one packet).

Next, top with 2 T salsa on each chicken, then 1/4 cup cheese each (wait on the cheese until ready to eat if using fat free). Bring up foil sides and double fold and roll down. Bring up ends and double fold to seal. Place in a baking dish large enough to fit them all.


Bake for 30-35 mins, until chicken is cooked through. Let stand 5 mins then vent foil packet before opening. Serve with dollop of sour cream.

Serves 3

With just a quick glimpse I figure these are about 6 pts each if you use fat free cheese and fat free sour cream. What a unique and yummy dinner! It is delicious. I may have to make these for Wednesday night church with some chips and salsa.

***Update***The hubby loved this! He asked that when we make it again to try it with rice vs the potatoes. This recipe is also gluten free if you get the right taco seasoning.
